Tell me how to accurately determine the type of engine FOC, BLDC

In short, I bought an engine(6354.KV190.1650W) from the seller with aliexpress and I can not configure it, also the scheme(Dual FSESC4. 20 Plus) with the remote (VX2pro).The problem is that I can't control the speed ie I give a little gas and the speed is at maximum.But I noticed if you put the engine type BLDC it is normal.I would and so left would but seller says that I have engines type FOC.

First, let's get the terminology right. The term "engine" is applicable to internal combustion devices. Machines running on electricity are commonly referred as "motors". Most people that know the difference will cringe when they notice the mix up. Same applies to "gas". In EVs, it's an "accelerator" or just a "throttle", just please no "gas" in an EV.  Now, to your specific issue, you need to provide  more  details if you want someone to help you. Maybe post some screenshots of your configured values.  What type of control mode are you using? My wild guess is that you may need to switch the throttle to current mode to command smooth acceleration. Can be a lot of other things but it's hard to recommend anything just by guessing your settings.

What kind of the throttle control are you using?

Are you using duty cycle or current control? 

If it is set to duty cycle, try current control.

I think his issue is that he thibks a motor has a "control type" because the seller had "probably" an add saying that the "FOC MOTOR", and maybe English is not his first language.

3 phase brushless DC motor can be controlled in different ways, BLDC and FOC are different algorithms that can be used, if you are are increasing the throttle and the motor is accelerating to much using FOC, I think what you probably want is to change the acceleration curve.

Another thing is that under very light load/no load, smaller motors can go full RPMs because it takes only very little current for them to spin. The real test if it works correctly is to test it under load. 

THe throttle should behave as expected: less throttle - less speed, more throttle - more speed. Even though it may go full RPMs with 5-10% throttle without load.
