I'm also looking into possible designs for a Vesc with these specifications, but i am not sure that only changing the mosfets will be enough to achieve a higher voltage rating. I think that the DRV8302 gate driver also needs an upgrade to accommodate for the high side switching voltage. Do you have an opinion on this matter?
I'd also be interested in a high frequency (20kHz - 4Mhz & high-voltage (10 - 50kV) VESC... In exchange the Amps would be moderate with 1-3A input...
I'd only do it myself, if there is nobody else with way more know-how and experience than myself that would enjoy doing it. I'd happily buy the parts and pay for R&D for such an individual...
I made some time a go fully isolated VESC hardware. It was early alpha stage but it works :).
Now i works on free time (not too much free time ;/ ) on VESC-Brain. It controls external power stage (MOSFET + drivers + voltage/current sensing).
Using GaN isn't good idea. They are very expensive and STM32 can't run them so fast that they can. SiC are best choice (but not cheapest). They reduce power losses significant to IGBT.

Yes for sure , the driver and the current sensing need to be updated with galvanic insulation
